Hugo Mateo Heinz is a New York-based chef celebrated for his distinctive culinary voice, which fuses global techniques with locally sourced ingredients. Originally from Argentina, Hugo has cooked for prestigious clients across the U.S., including time at Alter in Miami under chef Brad Kilgore, where he refined his skills in molecular gastronomy, and at Sweet Basil in Vail, Colorado, known for its inventive fare.
A passionate advocate of open-fire cooking, Hugo frequently partners with Agustin Mallmann to create immersive private dining experiences that explore this elemental technique. Now working independently, he curates high-end events across New York City, the Hamptons, and beyond—including his latest venture, Milasburg.
His innovative approach and dedication to craft have earned him a loyal following and a spotlight in Chefs and The City (Season 2), a series showcasing chefs who champion local sourcing and bold, creative cuisine.
Miami-based chef Regina draws inspiration from her Mexican roots, which have been shaped by the city’s dynamic culinary scene. She has pursued her career in some of Miami’s most acclaimed kitchens, including Itamae, Boia De, Le Jardinier, and Alter by Brad Kilgore. Her experience spans Michelin-starred fine dining, open-fire cooking alongside Agustin Mallmann, and artisanal baking at Zak the Baker, reflecting versatile craftsmanship and a deep respect for local and seasonal ingredients.
In addition to her expertise, Regina expanded her approach to food after completing a program at the Stone Barns Center for Food & Agriculture under Dan Barber. Embracing a farm-to-table philosophy, her understanding and connection to food has broadened and reshaped her culinary approach.
Now working as a freelance chef and founder of On The Table, Regina creates interactive dining experiences that celebrate seasonal, local ingredients while fostering wellness, community, and mindful nourishment. Her approach blends fine dining precision with the belief that food should nourish both body and soul—and that the best meals bring people together.
Sophia Kardonski, founded The Love You as an incubator for creativity and connection. The space brings together community, culture, and collaboration through intimate dinners, art exhibitions, and holistic culinary experiences. Originally from Miami, Sophia’s background spans art theory, curation, design, and cooking. After attending Design and Architecture Senior High in Miami, she spent six years in London, earning a degree in Art Theory and Curation from Central Saint Martins and a Diplôme de Cuisine from Le Cordon Bleu. Now back in her hometown, she uses these experiences to bring community together and create space for to engage, reflect, and connect—through food, conversation, and art.
